It is that time of year when we get out the cookie cutters and let the flour fly. Loads of holiday cookies and candies will be made this year and it's a great way to bring the family together. There's just one problem... the impact these culinary traditions have on our waist lines.
For active people, eating the occasional holiday cookie is no big deal. But it still isn't a very healthy option to have laying around the house. We found a tasty alternative to the traditional holiday cookies that is sure to satisfy both the athlete and sweet tooth in all of us.
Peanutty Energy Bars
Ingredients:
- 1/2 cup salted dry roasted peanuts
- 1/2 cup roasted sunflower nuts
- 1/4 cup toasted wheat germ
- 1/2 cup raisins
- 2 cups rolled oats
- 2 cups toasted rice cereal
- 1/2 cup crunchy or extra crunchy peanut butter
- 1/2 cup packed brown sugar
- 1/2 cup light corn syrup
- 1 teaspoon vanilla
Directions:
Mix together the first six ingredients in a medium bowl. Set aside. Combine peanut butter, brown sugar and corn syrup in a large bowl. Microwave on high for 2 minutes. Add vanilla and stir until blended. Add dry ingredients from medium bowl. Stir until coated. Spoon mixture into an 8-inch square pan coated with non stick spray. Press down firmly. Let stand for about 1 hour. Cut into bars.
Yields about 16-20 bars.
